RECIPE: Warm, Sweet and Comforting- a treat befitting mums

Give thanks to divine mums this Mother’s Day by making something delicious in the kitchen. A sweet treat would be lovely to show your love and gratitude to your mother. Here’s a quick and easy recipe for breakfast, brunch and even dessert that could make Mother’s Day a day to remember.

Apple & Blueberry Waffles

What you need :

150g plain white flour

1 ½ tsp baking powder

Pinch of salt

250ml milk

1 large egg

2tbsp sunflower oil (plus extra for brushing)

2 crisp eating apples, grated

200g blueberries

Maple syrup (for drizzling)

Directions

  1. Preheat your waffle maker to high. Sift together flour, baking powder, and salt into a mixing bowl and make a well in the centre.
  2. Add milk and egg, then whisk to a smooth, bubbly batter. Add the oil and apple, beat well to mix.
  3. Brush the waffle maker with a little oil, add a ladleful of batter and cook until puffed and golden. You will need to do this in batches, keeping the cooked waffles warm while you cook the remaining batter.
  4. Serve the waffles hot in stacks, topped with blueberries and a drizzle of maple syrup. You can even add a scoop of ice cream to serve it as a dessert. Enjoy!
