What you need :
150g plain white flour
1 ½ tsp baking powder
Pinch of salt
1 large egg
2tbsp sunflower oil (plus extra for brushing)
2 crisp eating apples, grated
Maple syrup (for drizzling)
- Preheat your waffle maker to high. Sift together flour, baking powder, and salt into a mixing bowl and make a well in the centre.
- Add milk and egg, then whisk to a smooth, bubbly batter. Add the oil and apple, beat well to mix.
- Brush the waffle maker with a little oil, add a ladleful of batter and cook until puffed and golden. You will need to do this in batches, keeping the cooked waffles warm while you cook the remaining batter.
- Serve the waffles hot in stacks, topped with blueberries and a drizzle of maple syrup. You can even add a scoop of ice cream to serve it as a dessert. Enjoy!
